BBQ Chicken Pizza!

I'm starting to realize that I really can't cook with out certain foods:  Bacon, BBQ sauce, Buffalo sauce and I'm sure some other things I am forgetting!

I knew I had a package of chicken breast that I was going to use for dinner... but I wanted to do something different with it.  Then the idea of bbq chicken pizza popped in my head!  It could not be easier...

You will need:

1 ball of pizza dough (get it from pizzeria!)
2 boneless skinless chicken breasts
1/2 red onion sliced
a good amount of BBQ sauce
shredded mozzarella
chunk of smoked gouda
handful of cilantro leaves, chopped

*Preheat oven to 475

 Let the ball of dough rest in a bowl with a light coating of olive oil all over it while you prep everything else.
 Slice the red onion on your trusty mandolin - make it a thin slice, but not too thin!
 Chunk up the two pieces of chicken - about bit sized is good.
 Season the chicken with some salt and pepper - then coat the chicken with a small amount of cooking spray.  Brown the chicken slightly in a frying pan until it is fully cooked.  Then set aside in a bowl with 1/4 cup BBQ sauce.
 Deglaze the frying pan with some more BBQ sauce - about another 1/4 cup.  Use a spoon to scrape all the brown bits off the pan.  This will help for easier clean-up, and add more flavor to the BBQ sauce!  Then put this sauce in the bowl with chicken.

On a floured surface, stretch out the dough.  If you are smart... you'd have a pizza stone!  But since I am not smart, I just used a cookie sheet.  When the dough is the right size for your needs, spread a little cornmeal on the cooking surface (cookie sheet here).  This adds some extra texture to the crust and helps in removal.  Use a fork to prick the dough all over - this will eliminate huge bubbles in the dough as it cooks.  We want a thin crust for this pizza.
 Cover the dough in more BBQ sauce - a thin layer is good because the chicken already has a lot on it.  Then spread the chunks of chicken all over and onion slices.
 Finally, add the shredded mozzarella & gouda all over. 
Bake for about 10-12 minutes or until crust is slightly crispy!

Yummy!!!  And lots of leftovers for lunch the next day!!!
