Prosciutto Wrapped Cod

Prosciutto Wrapped Cod with Roasted Baby Potatoes & Broccolini

Baby Yukon Golds...

2 tbsp olive oil
1 tsp Paprika
kosher salt & pepper

In a pot, cover the potatoes with cold water and bring to a boil - once the water starts to boil, let them cook for about 10 minutes.  Then strain the potatoes and toss them with the other ingredients in a bowl.  Bake them at 375 for about 20 minutes.

So you'll need (for 2 people):

2 Cod fillets (about 1/2 pound each)
2 tbsp pine nuts
good handful of basil leaves
olive oil
4 slices of good prosciutto

Toast the pine nuts in a small skillet.
You have to drink some good wine while cooking a good dinner!  AND in the Cakebread glass!  (If you ever go to Napa - you must check out Cakebread!  Great wine)

Chop the basil and pine nuts - drizzle a small amount of olive oil - chop some more!
Lay out two slices of prosciutto, overlapping a little.  Spoon on half the mixture as seen above.
Lay the cod fillet on the basil mixture.  Like in the picture, keep a small edge of prosciutto on the right and large amount on left.  Fold the small edge first, and then roll the fish onto the large side.
Do the same thing with the other 2 slices of prosciutto, fish and basil mix.  Hopefully you will get two fillet that look like this!

Garlic Infused Broccolini!

I usually make garlic roasted potatoes - but I wanted to make broccolini and add more flavor to it!  Rather than having everything on the plate taste like garlic, we'll just do the veggie.

Supplies:

2 bunch of broccolini
2 tbsp olive oil
1 clove garlic

Bring a pot of salted water to boil.  Crush the garlic clove in the oil and let that hang out for awhile.  Once the water is ready and boiling - throw in the broccolini for about 5 minutes.  Let them sit in a colander while you strain the raw garlic out of the oil.  Pour the oil over the broccolini - it'll have a nice garlic flavor, but you won't have to eat raw chunks of garlic!  

Now to cook the fish!

Heat a large frying pan with 1-2 tbsp olive oil and 1 tbsp butter.  Once it looks hot but not smoking, add the fish - I put them seam side down first.  
After two minutes flip them.  Throw the whole pan in the 375 degree oven for 5 minutes.

Ugh - this can be the worst part, right?  One thing is done 5 minutes before something else?  HATE that

I would try this order:

1) Boil potatoes 2) Prep other items: garlic crushed in oil, coat potatoes and put on baking sheet 3) When potatoes are in the oven, prep fish filets 4) Boil water for veggie 5) Start cooking fish when potatoes have about 5 min left 6) When fish goes in oven, throw broccolini in boiling water.
That should make everything come out at about the same time.  The potatoes can always stay in the oven till the other 2 items are set.
Like in the video link, use a knife to check the fish for doneness - it should poke into the fish very easily.


Yummy!!!  This was so good!!!!  It looks really hard to do and complex, but it wasn't!
