Yes Tazzy... Yes, we can! We both need to start working on our girlish figure. Summer will be here before we know it! Yikes...
COOKING FOR ONE TONIGHT!
Want to feel good about what you eat tonight? Here's something to easily make for yourself and feel good about what you made - and it tastes so good!
You'll need:
1 Halibut fillet (0.6 lbs)
As much asparagus as you want (6-8 spears)
2 scallions
1 tsp honey
1/2 lemon, juiced
1 tbsp chopped ginger
2 tbsp olive oil
ground pepper
grapeseed oil spray
*Preheat oven to 350
Cut off the woody ends of some asparagus - coat with the other table spoon of olive oil - crack some black pepper on the asparagus too. Now get a grill pan over a very hot flame! We're going to grill it super fast! (2-3 minutes on each side - you'll see the grill marks).
In a large frying pan - over high heat - add some of the grapeseed oil and sear the halibut - skin side down for 3 minutes.
After the 3 minutes, flip the fish (stupidly I did not use a non-stick pan... You probably want a non-stick pan here!!! Oops... oh well, it still came out so good... so keep reading! Carefully flip the fillet - the skin will be stuck on, so put it next to the stuck on skin! Finish in the 350 degree oven for 5 minutes. I just put the whole pan in the oven. Remember to use a pot holder when you take the frying pan out... Oh do I have a good story about THAT! ...lots of screaming involved!
Garnish the plate with a lemon slice and chopped scallions! (The scallion add such great flavor to the plate! YUM!)
And now you can feel good about the dinner you just ate! No rice, no potatoes - you can save those for tomorrow! :-)

sheesh even the healthy stuff looks difficult! i actually have never cooked fish. i'm afraid of it. and i love it so much. i need to try this. i don't have a grill pan to make pretty lines on the asparagus though :)
