"Chipotle" Guacamole!


This is as close as I can come to trying to make my own "Chipotle" guacamole at home!  It's very easy and all depends on your taste!

You'll need:

2 Hass Avocados
1 red onion
1 lemon
1 bunch of cilantro
kosher salt
pepper


Half the two avocados, remove the pit and scoop the "meat" out in large chunks.
Use 1/2 a lemon and squeeze the juice all over the chunks of avocado.  This will keep it from turning brown too quickly and add nice flavor!  I'm not 100% sure - but I found that using lemon instead of lime makes it taste closer to the way Chipotle makes it!
Next, take a few slices of red onion and chop it into small pieces.  Here is where you can use as much as you want, depending on how you like it.  
Add about half of the chopped onion to the avocado and mix with a fork.  
Chop up a good amount of cilantro leaves - also add these to the mixture.
Add a good size pinch or two of kosher salt and pepper.  Use a tortilla chip to test the flavors - Then you can add some more onion, add more cilantro - Whatever you like!  I wanted to add a few shakes of hot sauce to mine to make it a little zippy.   
Time to enjoy it on the terrace!!!   (You might want to make a double batch because it will go fast!)
